Enzymes from barley which solubilize b-glucan

Abstract

ß-Glucan solubilase releases ß-glucan and probably pentosans from cell walls making them more accessible to endo-B-glucanases and pentosanases respectively. An improved assay for measuring solubilase activity has been developed. Solubilase is present in raw barley and is relatively heat stable. Four fractions of solubilase activity have been located. Two of the fractions contain feruloyl esterase. Ester linkages involving ferulic acid, probably with the arabinoxylan component of the cell walls, may be disrupted by solubilase.
