Abstract

In the supply chain management (SCM) literature research relevant to food waste
prevention and management in Small and Medium Enterprises (SMEs) is scattered, despite the importance of SMEs to the UK economy, and the increasing importance of food production and availability. The objective of our study is to assess the capabilities of SMEs to efficiently manage food waste risks by conducting empirical investigation from the aspect of a risk management process. Our investigation is based on comparison of four small retailers in UK. Key preliminary findings show that there is a difference in food waste levels, as well as capabilities to manage food waste risks in relation to the type of retailer, business strategy and relationship with suppliers
